Jalebi Made from a fermented batter of flour, sugar, and ghee (clarified butter), Jalebis are deep-fried in oil and then soaked in a sweet syrup, known as “chashni”. This sweet and crispy treat is often served warm or at room temperature, and is a popular dessert in many Indian festivals and celebrations.
Ingredients:
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup lukewarm water
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon cardamom powder (optional)
Instructions:
- Mix flour, sugar, and salt.
- Add ghee and mix until crumbly.
- Gradually add water and mix until smooth.
- Add baking soda and cardamom powder (if using) and mix well.
- Rest the batter for 30 minutes.
- Heat oil in a deep frying pan over medium heat.
- Pipe the batter into hot oil in circular motions.
- Fry until golden brown and crispy (adjust heat as needed).
- Drain excess oil and soak in sugar syrup (chashni) for 2-3 minutes.
- Serve warm or at room temperature.
Tips:
- Use a piping bag or a plastic bag with a corner cut off to pipe the batter.
- Adjust the amount of sugar to your taste.
- If the batter is too thick, add a little water. If too thin, add a little flour.
- Fry the jalebis until they are crispy and golden brown.
- To make them extra crispy, you can add a little more ghee and baking soda to the batter.
Sugar Syrup (Chashni) Recipe:
- 1 cup sugar
- 1 cup water
- 1/4 teaspoon cardamom powder (optional)
Instructions:
- Combine sugar, water, and cardamom powder (if using) in a saucepan.
- Heat over medium heat until the sugar dissolves.
- Bring to a boil, then reduce heat and simmer for 5-7 minutes or until the syrup thickens slightly.
