Gujarati salad, also known as Gujarati raita, is a popular side dish originating from the state of Gujarat in western India

Ingredients:
- 1 cup yogurt (curd)
- 1/2 cup chopped cucumber
- 1/2 cup chopped tomatoes
- 1/4 cup chopped onions
- 1/4 cup chopped cilantro (coriander leaves)
- 1-2 green chilies, finely chopped
- 1 small ginger, grated
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt, to taste
- 2 tablespoons lemon juice
- 1/4 teaspoon garam masala powder (optional)
Instructions:
- In a large bowl, whisk together the yogurt, cumin powder, coriander powder, salt, and garam masala powder (if using).
- Add the chopped cucumber, tomatoes, onions, cilantro, green chilies, and ginger to the bowl.
- Mix well until all the ingredients are fully incorporated.
- Squeeze the lemon juice over the salad and mix again.
- Refrigerate for at least 30 minutes to allow the flavors to meld together.
- Serve chilled, garnished with additional cilantro if desired.
